Home-made "Pasta" sauce

Instead of buying cans of tomatoes to make a sauce, it's actually much healthier (and quite easy) to make your own. Often, canned tomatoes contain a lot of sodium and preservatives, and a nice side-effect of making your own is the nice feeling of "making from scratch".
The recipe below can be a nice base with veggies, to which you can add either meats, fish or even shrimp.

500 grams of tomatoes (1 lb)
2 onions, chopped
3 medium carrots, sliced
1 bell pepper, chopped
1 small zucchini, sliced
1 tsp dried basil
1 tsp cardamom powder
1/2 tsp garlic powder
4 dried chilies (or to taste)
coconut oil

In a big pan, heat the oil and cook the onions for about 5 mins. Add in the carrots, chili & spices. Cook thoroughly for another 5 mins.
Cut the tomatoes in quarters and add them in, heat on medium high. Let this simmer for about 30 mins.
Last, add in the zucchini & bell pepper and let it simmer some 20 mins more.

With this sauce the rule is, the longer you let it simmer, the more flavor it gets!
