The Green Gold

Today a little article about one of my best addictions: pumpkin seed oil.
A friend of mine pointed it out to months ago, when I was about to go on a road trip to Germany, asking me if I could bring him some. I also got a bottle of the green goodness for myself and have been hooked ever since.
Never before have I tasted such nutty, tasty oil!
When embarking on the Paleo train, I realized I didn’t have to worry about my choice of salad dressing, since I already loved adding the oil to my salads with some salt. It should not be heated, since heating destroyes essential fatty acids.

Pumpkin seed oil mainly comes from Austria & Slovenia, but is made in other countries as well. For people that look for it in Europe, it might also be called Kürbiskernöl.

The viscous oil is light to very dark green to dark red in colour depending on the thickness of the observed sample. The oil appears green in thin layer and red in thick layer. Used together with yoghurt, the colour turns to bright green and is sometimes referred to as "green-gold". (source: Wikipedia)
The green color will make your plate look a bit messy, and sometimes it’s a bit hard to wash off, but man, it’s good!
