Blueberry Coconut Pancakes

Pancakes are my new breakfast addiction (i'm Dutch, we eat pancakes for dinner here) and this recipe really blew my mind! For about 6 small pancakes:

4 eggs
1/2 cup of coconut milk
1/2 cup of water
1 tsp baking soda
1/2 cup coconut flour
fresh blueberries
coconut oil (for cooking)

Whisk all the ingredients, except the coconut oil thoroughly together.
Heat some coconut oil in a pan, scoop some of the batter and add a few blueberries.
Bake on both sides until brown.

Tip: sprinkle some lucuma powder on top for a bit of extra sweetness.

    1. You're welcome! I've never tried it with chocolate milk, it might taste a lot sweeter.
