Choc Chip Mint Ice-Cream (Paleo)

When I bumped into an offer at the store for a €15,- ice-cream maker, it was an offer I couldn't refuse!
Choc Chip Mint Ice cream was a long time request in our household, so of course that was the first recipe I tried. You need:

1 can of coconut milk
2 egg yolks
3 tbsp honey
2 tsp mint extract
1/2 cup dark chocolate chips

In a pan, heat the coconut milk, but do not boil. In a bowl, whisk the egg yolks & honey together. When the coconut milk is warm, add the mixture and mint extract and stir well. Take the pan off the heat source and let it cool.

When it's cooled, put the mixture in the ice cream maker and use as directed. In my case, I let it stir for about 45 mins. About half-way through stirring, add the chocolate chips. For a more firmer structure, put the ice cream in the freezer for about another 45 mins. 

If you don't have an ice-cream maker, you can follow the same steps, but pour the mixture into a bowl and stick in the freezer. Whisk the mixture every 30 minutes for the next 4 hours.
