Poached Eggs & Portobello burgers

Paleo is awesome for many reasons, but for me the #1 reason would be that eggs are a staple food. That makes me very happy. Eggs for breakfast, eggs for a snack, eggs for lunch, eggs for dinner. I'd probably be making a good investment by getting some chickens on my roof-terrace, but not sure if the landlord would approve. Eggs are a nutritional powerhouse, and no, are not dangerous for your cholesterol levels.
Anyway, the options with eggs are endless, scrambled, fried, cooked, boiled, made into other foods like this, or cooked in other foods like this. Ok, you get the point.


This time, it was poached eggs time. Served with baked portobello mushroom, spinach, tomatoes, avocado and sausages, i believe the traditional English breakfast has some serious competition.

  1. Looks delicious, just wondering why its labeled as a "burger" unless there's a hamburger patty under the egg? lol

  2. :-) The word burger just popped in my head, used the portobello actually to replace the english muffin, but will for sure do the hamburger patty next time!
