Endive Ricotta rolls

Sunday is experiment day, and the recipe was already forming in my head. Now the challenge to put it on a plate;


250 gr "shawarma" meat
6 big endive leaves
1 onion, chopped
1 clove of garlic, chopped
coconut oil
ricotta cheese


In some coconut oil, heat up the onion, garlic & meat, until the meat is tender. In the meanwhile, bring a pan of water to a boil. When the meat is done, dip each endive leaf into the boiling water for about 30 sec. 
Then scoop some meat & about a tsp. of ricotta on a leaf and roll it up.
Serve with salad and eggplant fries.
