Adapted from the website I breathe...I'm Hungry, I decided that today was the day cinnamon squares were going to be made.
The recipe is easy to follow, and with 6 ingredients, a great low carb snack or breakfast cereal.
1/2 cup of ground flax seed
1 tbsp cinnamon (although next time I will use less)
1 tbsp coconut oil
1/2 cup water
1 tbsp erythritol
Mix all of the ingredients in a blender, or use a Hand Blenderuntil it turns into a pasty dough.
Spread it out on a cookie sheet or parchment paper, until you have about a 3mm thick spread.
Pre-heat the oven to 140 celsius and bake for about 15-20 mins. Turn the oven down to 120, cut into squares and bake for another 15 mins. Turn the oven off and let it sit for about an hour. The squares should come out crispy. If not, bake again till they are more dry.
