Spinach Mince & Feta

Spinach is rich in potassium, vitamin K & A, and a great vegetable for stir frying. This recipe is really simple, and I make it often to have several portions for lunch as well.

You'll need:


500 gr fresh spinach
500 gr ground beef
2 garlic cloves, chopped
1/2 zucchini, chopped
1 tbsp piri piri, ground
1 tsp ground cumin
50 gr feta cheese
200 gr mushrooms, quartered
1/2 cup of pistachios
salt to taste
coconut oil
lemon juice

Cook the garlic in oil, add the piri piri and let it simmer for a bit. Then add the ground beef & salt. After the beef is cooked, add the zucchini and mushrooms, cook for about 10 mins on low heat.
Last, add the spinach. To avoid the chalky taste from the spinach, drizzle some lemon juice on top (preferably fresh)
Sprinkle some pistachios on top before serving, and crumbled feta. Simple, but delicious!
