Cabbage Enchiladas

Enchiladas are awesome, because they are easy to make and you can add any ingredient to it that you like. So for example perfect for all those left-over items you have in your fridge. 

You can use different types of wraps to make them, but there is another option: cabbage.
With about 6 calories in 1 big leaf, you can't go wrong here!

Ingredients:


500 grams of ground beef
1 tsp cumin
1 tsp chilli powder
1 onion
1 clove of garlic
stir-fry veggie mix , about 300 grams
10 mushrooms
ghee






Cook the beef with all the ingredients together, set aside. Next, take a head of cabbage, and make a cut at the bottom of the leaf. Put it under warm running water, let the water get underneath the leaf, after a few seconds, you can peal the leaf off more easily, and it won't tear as quickly. Bring a pan of water to a boil with salt, and cook the leaves for a few mins.

Preheat the oven to 180C (350F) fill the leaves with the mix, and roll them up. 
Bake for about 20 mins.
