Coconut flour Choc-Chip muffins



Yes, not the healthiest creations in the world, but definitely one of the most surprising ones, looking at the outcome.
Had accumulated a fair bit of dark chocolate chips for some reason, and I actually never made anything chocolate chippy before [weird, I know]
In 30 minutes, you can indulge in the most moist gluten free & grain free muffin ever: (adapted from Wellness Mama)






1/2 cup coconut flour
5 eggs
1/4 cup coconut oil, melted
1/4 cup dark cocolate chips
1 cup apple sauce
1 tsp baking soda
cinnamon to taste

Heat the oven to 180C (350F) In a large bowl, wisk the eggs, then add all the other ingredients and mix well. Line a muffin tin with either muffin papers or molds, and scoop the mix in.
Bake in the oven for about 15 mins.
