The Whole30, take 3

Last month, I made a short attempt to do a Whole30, but decided in the end it would be better to postpone it. Yes, I know there is always an excuse not to start, but sometimes you just need to make decisions like that. Anyway, our "19 days of Whole30" starts on May 8, and we can't wait to get started!

We kind of consider it as a reset before our long, 5 week holiday starts, but of course we'll attempt to stay as whole30/paleo as possible during our trip (Barcelona & Bali)
This time, 1 very predominant element will be removed from our breakfast routine: bacon.
It got me thinking recently, somehow bacon is considered almost synonymous with paleo, but as decribed in the bacon manifesto, not all bacon is created equal.
Quality indeed does matter, and even though I have a sugar free variety available, it is definitely not organic (unfortunately the organic bacon has sugar in it) That and the fact that it contains nitrates made me decide to go bacon free for a while.
Of course, if I can find a compliant source, I'd be more than happy to try, but this also forces me to make different things for breakfast and that won't hurt me either.
