Google+ Cave Food Kitchen: Taro Hamburger buns

Taro Hamburger buns

To start off right; I can't take credit for the recipe, since I found it here, but I wanted to share my experience with you and show you how they turned out.

Unfortunately I didn't take pictures of the whole process, but it's actually quite simple.
To make 8 parts (so 4 full buns) you need:

250 grams of cooked taro
100 grams of coconut oil
45 grams of coconut flour
30 grams of coconut milk
4 eggs
1/4 tsp of salt

To cook the taro, just rinse the peel clean and place them in boiling water and cook for about 20 mins. To see if they are cooked, stick in a fork and when the taro slides off, it's ready.
The peel comes off easily now, and then rinse them one more time.

Melt the coconut oil and mix it all with the rest of the ingredients. Crush the taro a bit with a fork and add them in as well. Either use a food-processor or a hand blender to mix all the ingredients together into a puree.

Heat the oven to 180C (350F) On a sheet of baking paper, scoop the puree in 8 parts and spread it out into a patty. Bake in the oven for 20 minutes.
