Oven-Baked Berbere Chicken

Oven-baked chicken is easy and simple and there a 100's of ways to make it. This time we're making a Berbere Chicken dish, getting it's name from the spice mix that is is used in the Ethiopian kitchen. Berbere means hot in Amharic (Ethiopian) and is a spice mix that is easy to make yourself.

The recipe can be found here, but is also available ready-made.

Ingredients:

2 lb (1kg) chicken
1 tbsp berbere
1/2 tsp cardamom
2 onions, chopped
2 cloves of garlic, sliced
2 tbsp olive oil
1 tbsp fresh lemon juice
1/2 inch of fresh ginger, sliced
1/2 tbsp dried parsley

Preferably, let the chicken marinate for a few hours before cooking.
Mix all the ingredients together, making sure the chicken is fully covered in the spice mix.
Heat the oven to 180 (350F) and place the chicken in an oven-dish with a lid. Bake in the oven for 1 hour.
Serve with stir-fried broccoli and with a mixed salad.
