Plantain 'n Eggs

Since going Paleo i've been experimenting more, meaning i'm using products i've never used before. I read about plantains here and there, and have seen them quite often already in stores and markets, but always regarded them as not being part of my "cooking culture"
But i learned that going into the Paleo zone means going out of your comfort zone, so a recipe for a plantain frittata caught my eye.

Here's what you need:

8 eggs, beaten
2 green or black plantains
1 cup of fresh chopped parsley
1 red bell pepper, chopped
1/2 onion, chopped
salt & pepper to taste
coconut oil

Peel the plantains and dice them. Saute them in the coconut oil until they are brown and crispy, add the onion, bell peppers & parsley towards the end.
Put this mix, salt, pepper & eggs into a round oven dish (for example) Mix it thoroughly.
Place the dish in a pre-heated oven (350F or 180C) and let it bake for about 20-30 mins.
