Power Keto Breakfast

A great breakfast to keep you full for a big part of the day! 


3 eggs
3 cubes frozen spinach
1/2 avocado
1 tbsp crème fraîche
salt & pepper
1 tsp sambal oelek (not sriracha)
1 tsp coconut oil


Defrost the spinach in the microwave on high for about 2 mins. In the meantime, whisk the eggs in another bowl, add the spinach, some salt & pepper and zap again for 3 mins.
Scoop the coconut oil on top and serve with the sambal, crème fraîche & avocado.
