Curried Eggplant Mix o-Rama

In the last 2 days I've tested this recipe a few times, with the final recipe being a bit different from the starting one. It just so happened I had a few eggplants around, and wanted to play around with a few spices.

Here's wat you need:

Served with salmon
1 eggplant, sliced and diced
1 zucchini, sliced and diced
bunch of snake bean*, chopped
onion, chopped
2 cloves of garlic, chopped
1 tsp chili flakes
1 tsp ginger powder
1 tsp curry powder
1/2 tsp ground cumin
1/2 tsp cardamom
1/2 tsp cinnamon
1 cup of coconut milk
coconut oil

First heat the onion & garlic in the oil, then add the spices. Let it cook for a few mins, then add the vegetables and a little bit of hot water to cook it a bit. Last, add the coconut milk and let it simmer on low heat for about 15 mins. This is a geat base for any type of additional ingredient; shrimp, chicken, beef, options are endless!
Serve with cauliflower rice or mash.

*Snake bean or yardlong bean is a bean used a lot in the Surinam kitchen, "Kouseband" is eaten for example in a "roti" dish.
