Rare-A-Bit Different

Welsh Rarebit, a dish I never heard of before, until I saw Jamie Oliver whip some up on one of his cooking shows. Making something like it was going to be a challenge, since the original recipe calls for white bread, but since my (ahem) amazing low carb bread recipe, this should no longer be a problem.

Ingredients: *
2-3 slices of psyllium husk bread (if you've not made this bread yet, 
go and be ashamed of yourself)
1 egg yolk
3 tbsp creme fraiche
1/2 tsp mustard powder
salt & pepper
50 gr shredded cheese (I used Gouda)
2 tbsp low carb ketchup (or Heinz)
Worcestershire sauce


Toast the bread on one side for a bit in a heated oven (use the broiler function) Mix the egg, creme fraiche & mustard powder. Season it to taste with salt and pepper. Stir it all through the grated cheese and mix well. (I actually made it the night before, saves time in the morning)
Spread some ketchup on each piece of bread, and layer the mixture on top. Put them under the broiler again for about 5 mins or until the cheese turns brown and starts to bubble.
Make a few cuts through the cheese and drizzle some Worcestershire sauce on top. Delicious!


Must say, I still want to tweak it a bit, perhaps adding a bit of chili powder or other spices. Bonus: this definitely put
Worcestershire sauce on the map for me.

* I am aware there are many variations of the recipe, and I'm not claiming mine is authentic (far from it actually) Some recipes even call for beer, milk, flour & other spices.
