Low Carb Protein Pudding

Inspired by this awesome recipe, I decided to create my own adaptation, mostly because sugar free jelly is pretty hard to find here. Adding a flavor inspired me to use protein powder instead.

You need: (for about 4 portions)

2 sheets of gelatin
1,5 cups of water
1/2 cup of full cream
1/2 cup of water with vanilla protein powder dissolved (I used Optimum Nutrition 100% Whey Gold Standard Protein, deee-licious!!)
1 tsp of erythritol or other sweetener of choice (optional)

First, put the sheets of gelatin in a small amount of water to soften (about 5 mins.) When softened, squeeze the water out a bit. Next, in a small saucepan, heat up about 1/2 cup of the water (do not boil) and let the gelatin dissolve. Stir well, and while stirring, add the remaining ingredients until it is all dissolved and mixed. Pour into 4 small bowls and cool in the fridge for at least 4 hours.
