Whole30: Day 14

Almost half-way, and at this point I actually don't see any reason why this should only be for 30 days. This type of eating is in my humble opinion, so easy to adapt to, that it almost seems ridiculous to go back to your old eating habits.
Again, I know I can say this a bit more easily, since I've been on paleo already for a lot longer, so I was free from the cravings for grains, rice, sugar, cereal, fizzy drinks, fast food, processed snacks, etc. 
Whole30 also has a reintroduction protocol (in their book) But I'm sure that by that time you've become more aware of what effect some of those foods have on you, that you don't even want them anymore. Food for thought?


First meal was also a pre-workout meal, and consisted out of scrambled eggs, bacon, sweet potato & salad. 
A little serving of coconut milk, almonds, coconut chips and berries on the side.











Again, another awesome work-out, a lot of energy and it felt like I could have done another wod right after it.
Sudden heavy snowfall on the bike ride home made it quite a challenge!

Made myself an omelet with bacon & banana, not quite according to the guidelines, since the veggies were missing, but delicious nonetheless :-)


Sunday was also time for recipe making. I came across a breakfast casserole recipe, found here
I love making dishes like this, because this will take care of a few meals during the entire week. 
To rice the cauliflower, I came across a trick a while ago that works really fast and easy.

At the same time, my so cooked up a delicious stew with sweet potato, parsnip, carrots, zucchini, rutabaga, tomato sauce & pork in some broth, spiced up with chili, garlic, curry powder & herbs.

So for dinner, stew and a salad, topped with some walnuts and radish. 
It was a good weekend.
