Whole30: Day 15

Today marks the halfway point, and was filled with an unexpected challenge early on! We kicked off the the breakfast casserole I made the day before. It was nice, but the lemon juice was a bit overpowering to our taste, so next time I might add less or add an onion or tomato.
Served with 1/2 a pear, and coconut milk fruit/nut mix.






The challenging part was the bike ride to work; unfortunately not all the roads were snow free, so the last few kms were an actually struggle through the snow. 



Mind you, most bikes we ride here are single speed city bikes, so nothing fancy and definitely not equipped for complicated 
road circumstances. Anyway, it was a massive calorie burner.





Hungry by lunchtime for sure, a filling meal of stew and broccoli did the trick.


Still pretty full from lunch, at abut 4pm I just had a banana pre-workout.

Dinner was a stir-fry of kale with oinion and ginger, steamed carrots and broccoli, pork sausages and salad.




It is perhaps a bit against the rules, but to try a little recipe, we had some chia "pudding" with cocoa, coconut chips and a few blueberries.

Recipe is simple:

1/4 cup almond milk
2 tbsp cocoa powder
2 tbsp chia seeds

Mix all together, put in 2 bowls and let it set in the fridge.
