Whole30: Day 21

We're coming into single digits now, it has gone really fast this last week! Thoughts have crossed my mind; will I continue? Will it become a Whole35? Or more? To be quite honest, even though I feel like a million bucks and have tons of energy, there might be one "vice" that I could not part with. Dark chocolate.
We love to travel the world, and there are always 2 things we look for everywhere we go: good coffee & dark chocolate. You might even call it a bit of an obsession (in a good way, that is) Luckily, coffee is Whole30 compliant, but the chocolate is missed. Not terribly, but if you see our chocolate collection, you'll get the idea. Not to torture you, but I just wanted to visualize it... But, if Mark Sisson approves, I don't think i'm doing that bad after all!


The % varies between 55% and 99% with one beauty from Scotland, a 99% with only 2 ingredients: cocoa mass & vanilla.













So, most likely, the first non-compliant food after the Whole30 will most likely be dark chocolate, but the way I feel now, it will not necessarily be on day 31. I'd love to hear your thoughts: What food miss you most? Will you go back completely the way you ate before the Whole30?

Today was a good day to try a new recipe, something I pinned a while ago on my Pinterest.
Shakshuka, a tomato/egg dish, very popular in Marocco, Tunesia, Israel, Libya & Algeria.
Because of the eggs, it's eaten for breakfast a lot, but can also serve as an evening meal.
Comparable dishes are huevos rancheros (Mexico) and menemen (Turkey)

Must say, i'm very happy to have made this, this dish has become an instant favorite in our house!

Together with the shakshuka, I made my first attempt for sweet potato hash-browns, but that turned out less successful.
Used this recipe, but substituted arrowroot flower with coconut flour.
Unfortunately the hash-browns burned a bit, so will try again next time!













Since we always take our time to prepare food on Sundays, my so made a marinade for the lamb chops consisting of olive oil, dried mango, apricots, shredded coconut & chili.





In the afternoon, we both had an apple with some cashew butter. Not precisely the best kind of snack, but we just felt like having an apple, and cashew butter is just heavenly.

For the evening meal, we cooked the lamb chops in aluminum foil in the oven, and a rather unusual dish, cocoa toasted cauliflower. I added 2 red peppers for some color.

Served with a big salad, this was a fantastic and filling meal!

Salad: lettuce-mix, cucumber, tomato, capers, walnuts & pomegranate seeds.

Ok, have to admit, we had a bit of a "treat" after wards, coconut milk mixed with some chi seeds and cocoa powder, topped with a few goji berries & coconut chips. We're sorry.
