Whole30: Day 20

Today we were going to help a friend move, so we decided a big meal to start the day right was in order.
Breakfast sausages & an egg scramble, made with green bell pepper, jalapenos, lardons & coconut milk.
Served with half an avocado, this should keep us going for a while.
To be sure, we took some foods with us in case we did get hungry. 
It was indeed a bit of a workout, up and down stairs, carrying boxes, etc. But neither of us were really hungry, but at about 3 pm, we decided to have a banana and some almonds.



At home, I wanted to try a eggplant chips recipe, which turned out really nice, will make this again for sure! Together with an eggplant dip, available in one of the many Turkish supermarkets here in Amsterdam, it's truly delicious.












We then proceeded to roast a whole chicken in the oven, marinated with paprika, peppers, garlic & ghee.
Added some purple (!) carrot and yellow beets, sweet potato fries and a salad.
