Breakfast: Spinach & Egg bake

The following is an excellent weekend recipe, making your breakfast or brunch just a little bit extra special. You can play with the ingredients to your own liking, maybe adding in some extras, or even left-overs from the week.

For 1 bake:

4 eggs
2 tomatoes, cut in quarters
4 strips of bacon
1/2 onion, chopped
handful of fresh spinach
1 chili, chopped
salt & pepper
coconut oil

Get a small ovendish, and grease  it a bit with coconut oil.
Next, line the dish with strips of bacon. In a fryingpan, cook the onion, spinach & chilli together.
Fill the dish with the spinach and crack the eggs in. Last, add in the tomatoes.
Bake in the oven on 180C (350F) for about 25 mins.
