This simple and quick dish is great when you have a busy lifestyle and upon coming home you have other chores waiting for you. It cooks in the oven and is ready when you are!
2 chicken thighs
2 tbsp coconut aminos
2 tbsp sesame seed oil
1 tsp chili flakes
1/2 tsp ginger powder
1/2 tsp coriander powder
Chop the onion and in a bowl, mix with the other ingredients. Cover the chicken with the onion marinade. Ideally, you let it marinate for a few hours.
Heat the oven to 180C (350F) and place the chicken in an oven dish with a lid (or top with aluminum foil)
Bake for 30-40 mins. Serve over carrot-zucchini noodles.
