Non-Dairy Cheese

First off, I have to say I can't take credit for the recipe, since it was posted here, but I wanted to give it a try and share the result with you. Have been wanting to make this for a while and the other day I had some free time in the kitchen, so here it goes:

1 1/4 cup of cashews (unsalted)
1 tsp salt
1 tsp nutritional yeast
1/2 tsp basil
1/2 tsp oregano
1/4 tsp pepper
1/4 tsp garlic powder
1 1/2 cup almond milk
1 tbsp coconut vinegar
1/4 cup light olive oil
8 tsp of gelatin powder

In a pot, bring some water to a boil and add in the cashews. Let them simmer for 15 minutes and then strain the water. Add in all the ingredients above the dotted line, and grind it all together in a food processor.

Bring the almond milk, vinegar & oil to a simmer and dissolve the gelatin. Add in the nut mixture and with a hand mixer, make it into a smooth puree.
Pour into a bowl and let it cool off, then place in the fridge for at least 2 hours to set.
Have to say, it tastes really nice!
