Whole30: Day 19

It looks like the cold snap will be over soon here, but this morning I had to bike to work in a chilling -9C (16F) 
We started the day with simple eggs & bacon, and this time I added some chopped up carrot, which turned out really nice. A bit of avocado, berries & coconut chips on the side and we were good to go!

Following meal was at about 1.30 pm, and was a nice mix of stew, Jerusalem artichoke with spinach & some bacon and tomato.



Was quite full for the rest of the afternoon, I only had a bit of coconut flakes an hour before my workout for a bit of extra fat. Must say, that those coconut flakes a dangerously addictive!

Maybe a bit tmi, but for a big part of the day, I was having some issues with my bowels, things just didn't feel right, also my work out wasn't as good and powerful as before.

After the workout, I had a boiled egg & some sliced chicken dipped in a bit of applesauce.

Our last meal was a delicious Maltese dish, kapunata, with a burger & salad. This dish used to be made by the Maltese grandmother of my partner and is amazing.

Ingredients:

2 small onions, chopped
4 cloves of garlic
3 dried chilies
brown these for about 4 mins, then add;
1 eggplant, diced
1 zucchini, chopped
1 red bell pepper, chopped
12 tomatoes, cut in quarters.

Let this simmer for about 2,5 hours on low heat.
